These ultra-thick noodles are boiled until soft and eaten mixed with a dark, thick and flavorful sauce. The sauce is made from ingredients including tamari soy sauce, shaved bonito, minuscule dried fish and kelp. The noodles are boiled for an extremely long time to take away their firmness, almost an hour compared to around 15 minutes for most types of udon.
